Healthy Watergate Salad (with Greek Yogurt)

This healthy watergate salad with Greek yogurt recipe takes a traditional dessert puts a lighter twist on a classic dessert. In the midwest, we often called this a pistachio fluff salad, and others may call it Shut The Gate Salad, Green Goddess, Shamrock Salad, Mean Green, Green Stuff, Green Fluff, Green Goop, or Pistachio Delight. Whatever name you may call it, it is still delicious! This recipe makes an individual dessert bowl for one, but you can easy multiply the recipe for a full-size sharable dish for your next gathering.

Ingredients for Healthy Watergate Salad

  • Greek yogurt –– I like to use single serve Greek yogurt containers to make this recipe even easier! Greek yogurt adds extra protein to this dessert salad.
  • Pistachio pudding mix (sugar free recommended)Jello makes a sugar-free pistachio pudding mix that adds great flavor and substance to the unflavored Greek yogurt. I use the sugar free version to keep the sugar count lower, but you can use the version that works best for you.
  • Cool whip — Cool whip is optional in this recipe, especially if you are not a fan of the Cool Whip taste or ingredients. I like that the Cool Whip adds extra fluff to this dessert.
  • Marshmallows — Adding just a few marshmallows will not add many extra calories but it will make this dish taste like the original pistachio salad.
  • Pineapple — Pineapple may seem like a strange fruit to add to a pistachio, marshmallow, and yogurt mixture, but, trust me, this pairing is so delicious.
  • Pistachios — If you want to add more healthy fat to this dish, you can chop some pistachio nuts up and sprinkle them on top after the pistachio putting is all mixed up.

How to make a healthier watergate pistachio salad

For one portion

To make this healthy watergate salad, combine the Greek yogurt and pudding mix in a cereal sized bowl. Then, mix in the Cool Whip, and add the pineapple. Once all the pineapple pieces are coated, sprinkle pistachios on top.

For a sharable side dish

If you’d like to bring enough of this healthy pistachio fluff salad to share at a party or potluck, I would recommend quadrupling the portions and mixing in a large mixing bowl. For an even bigger salad, you can multiply the initial ingredients by 6-10 (or more!).

Ingredients

  • 1 5.3 oz containter Greek yogurt
  • 7 g pistachio pudding (sugar free recommended)
  • 27 g Cool Whip
  • 1 cup pineapple, diced
  • 7 g mini marshmallows
  • 7 g pistachio, chopped

Instructions

  • Empty the small Greek yogurt cup into a bowl.
  • Mix in the pistachio pudding until combined.
  • Add the Cool whip to the pudding and Greek yogurt mixture, and stir until combined.
  • Add the pineapple chunks and mini marshmallows. Stir until the pineapple and marshmallows are coated.
  • Top with chopped pistachios.
  • Enjoy!

Notes

If you’d like to make a larger batch to share at a party or potluck, quadruple the recipe (or 6x or 10x, depending on the crowd size!)
