What ingredients do I need?

  1. Eggs — this quintessential healthy breakfast food is packed with protein and healthy fats.
  2. Greek yogurt — the not-so-secret star of this dish, greek yogurt adds creaminess to the eggs and an extra dose of protein
  3. Salt and pepper — add seasonings in to match your taste preferences. My favorites are the basic salt and pepper, but other seasonings such as a dash of Mrs. Dash can taste amazing, too!

How do I make eggs with greek yogurt?

Mix the yogurt and eggs together until combined. Try to get as many yogurt lumps out as possible, but the rest will integrate into the eggs when you start cooking them.

Add the egg mixture to the pan, trying to break up any remaining yogurt clumps as the eggs cook.

Mix the eggs around the pan as they cook, making sure to scrape the bottom frequently.

The eggs will appear extremely runny, but once cooked, they will magically come together at the end into a perfect creamy and fluffy egg consistency!

Ingredients

  • 2 Tbsp. greek yogurt
  • 2 Eggs
  • Salt/pepper to taste

Instructions

  1. Heat a pan over medium heat.
  2. Place two cracked eggs into a bowl.
  3. Add the yogurt in, and mix well with a whisk or fork. Try to remove as many yogurt clumps as possible.
  4. Add the egg mixture to the heated pan, and continue to mix in the pan to remove any remaining yogurt clumps.
  5. Continuously mix the eggs as they cook, scraping the bottom to make sure the eggs are not sticking.
  6. When cooked (4-5 minutes), the egg mixture will be a fluffy (but not runny) consistency.
