This yummy, savory, and EASY greek yogurt egg recipe will win over egg skeptics and help you break free from egg fatigue. The greek yogurt creates creamy eggs, perfect to add to toast, pair with breakfast sausage, or eat on its own for a filling, protein-packed breakfast.

- 2 Tbsp. greek yogurt
- 2 Eggs
- Salt/pepper to taste
Instructions
- Heat a pan over medium heat.
- Place two cracked eggs into a bowl.
- Add the yogurt in, and mix well with a whisk or fork. Try to remove as many yogurt clumps as possible.
- Add the egg mixture to the heated pan, and continue to mix in the pan to remove any remaining yogurt clumps.
- Continuously mix the eggs as they cook, scraping the bottom to make sure the eggs are not sticking.
- When cooked (4-5 minutes), the egg mixture will be a fluffy (but not runny) consistency.
