Greek Yogurt Snickers Salad (protein snack version)
If you're a Midwesterner -- like me -- chances are you are extremely familiar with the classic potluck dish, Snickers Salad. It's a delicious combination of fluffy cool whip, apples, and, of course, Snickers. If you are not from the Midwest, you might be slightly confused by the ingredient combination, but trust me, the flavors are so delicious. I've taken the classic ingredients, lightened them up, and increased the protein for an easy high-protein dessert or snack. You can also triple or quadruple the ingredients for a sharable size of this Greek Yogurt Snickers Salad.
- 1 small, individual container Greek yogurt
- 7 grams sugarfree instant pudding mix, vanilla
- 27 grams Cool Whip (regular or reduced fat versions)
- 10 grams collagen (optional)
- 1 apple, chopped into cubes
- 1/4 bar Snickers, regular size
Empty the Greek yogurt into a bowl and mix in the pudding mix until its fully integrated into the Greek yogurt.
If you are choosing to add collagen, do it at this step, mixing it in well.
Mix in the Cool Whip. You can leave this out if you like, but it does add volume and fluffiness.
Chop that apple into cubes and add it to the pudding/Greek yogurt mixture.
Mix well until the apples are coated.
Top with 1/4 bar of chopped up snickers.
